Sodium copper chlorophyllin is a dark green powder. It takes natural green plant tissues, such as silkworm dung, clover, alfalfa, bamboo and other leaves as raw materials, uses copper ions to replace the magnesium ions in the center of chlorophyll, and saponifies it with alkali to remove methyl and phytol groups. The carboxyl group formed becomes disodium salt.Therefore, sodium copper chlorophyllin is a semi synthetic pigment. Chlorophyll series pigments with similar structure and formation principle also include sodium iron chlorophyllin and sodium zinc chlorophyllin.

Sodium copper chlorophyllin salt powder is widely used as a colorant in the food industry. In China's food additive standard GB2760-2011, copper chlorophyll sodium salt can be used in frozen beverages, canned vegetables, cooked beans, processed nuts, candy, baked goods, fruit and vegetable juices, mixed wine and other foods.
